Beef Tenderloin
My profession is being a meat cutter. This is my first beef tenderloin I've ever tried; cut by yours truly.

Believe it or not how small it is, a tenderloin holds the most trimming yeild of any meat. I cut a whole top round with just a hand full of trimmings. A tenderloin on the other hand accumulates alot. You have to take all the fat off.
Mine was a 7 pounder. This is half of it. I'm marinating it in lemon juice, worcestershire sauce, oil, salt, pepper, garlic sauce and then I'm just going to put butter on it and throw it in the oven.

"Skin off, small pieces". We get that 200 times a day and it drives me nutz : D
Update: let's just say I'm a better cutter than a cook. My mom can cook eye round steaks more tender then I just cooked it.
